Start with this guilt-free Quinoa Flour Pancake recipe. It is completely plant-based and 100% free of any gluten, animal products, refined sugars, saturated fats and cholesterol.
These are so delicious you can't believe they are actually healthy for you!
- 3/4cup quinoa flour
- 3/4 cup plant based milk
- 1 tbsp apple cider vinegar
- 2 tbsp maple syrup
- 1 tbsp peanut or any nut butter
- 3/4 tsp baking soda
- 1/4 tsp cinnamon
- Pinch of Himalayan salt
Mix together plant based milk and tablespoon of apple cider vinegar. Set aside for a few minutes.
Meanwhile, in a medium bowl, place quinoa flour, maple syrup, peanut butter, baking soda, cinnamon and himalayan salt.
Add in apple cider-milk mixture and whisk until combine. Let it rest for 5-10 minutes.
Heat a non-stick pan over medium heat, then pour in pancake batter a 1/4 cup at a time. Flip when center begins to bubble and edges are dry, cook on other side.
